Bacon and Cheddar Grilled Potatoes

Tis the season for new potatoes. You boil ’em, smash ’em, gratin ’em and make too many potato salads with ’em. So for a nice change of pace (and a lot less butter and mayo), fire up the grill tonight and try this recipe I made up when I, too, was getting a little bored with the same old same old.

Bacon and Cheddar Grilled Potatoes

Wash 4 potatoes (about tennis ball size), cut them in half lengthwise and dry them. Rub each half with a bit of olive oil then sprinkle on a little salt and pepper. Place them cut side down on a moderately hot grill for about 10-12 minutes until they start to look golden. Flip them over and let them cook another 8 minutes or so until they’re cooked through.

Meanwhile shred 2 ounces of extra sharp cheddar cheese and combine it with 2 tbsp of real bacon bits*. Lower the heat on the grill and top each potato half with some of the cheese/bacon mixture. Let it melt for a minute and then – dig in!

* Feel free to experiment with any flavor of cheese or meat you like. Maybe some smoked mozzarella and a slice of pepperoni. Or perhaps a basil leaf or two and a sprinkling of parmesan. If you discover a favorite combination, let us know. We love new ideas!
