This is one of those recipes that just sort of happened because I had zucchini (lots of zucchini) and pizza sauce on hand.

Therefore, the amounts are up to you. If you want to make a small one for a single person, then use enough to fill whatever dish you are using. If you want to make one big enough for a 13×9 cake pan, then go for it.

Zucchini Pizza Bake

Zucchini, sliced
Onion, roughly chopped
Olive oil
Pizza sauce
Mozzarella cheese
Basil leaves, optional

Heat the oil into a frying pan and add the onion and zucchini. Stir-fry until the vegetables are tender but not mushy. Season with pepper if desired.

Transfer the cooked vegetables to a baking dish big enough to accommodate the amount of vegetables you have cooked.

If using basil, place on top of the cooked vegetables. Dot the top of the vegetable mixture with pizza sauce and gently spread it until it covers the top of the vegetables, adding more as necessary to cover any holes.

Sprinkle mozzarella atop the sauce and place under a broiler until the cheese is bubbling and golden brown, usually at least 5 minutes.

Serve hot.
