If you like spices and apples, then this bread is for you.

Unless you overcook it for a long time, you will find this moist loaf is full of flavor.

But make sure it is fully cooked by using a cake tester. It is a dense loaf and can fool you if you just tap the top of it.

As for variety of apple, I usually use Macintosh, but others would work. Just make sure you dice the pieces well for apples that are harder than a Mac. Macs tend to cook up nicely, even in this bread.

Apple Bread

2 cups sugar
2/3 cups vegetable oil
2 eggs
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
3 cups flour
1 cup cold coffee
2 cups raw, chopped apple
1/2 cups nuts, optional
1/2 cups raisins, optional

Mix first three ingredients. Add spices. Mix in baking soda and flour. Add coffee. Fold in apples, nuts and raisins.

Bake one hour at 350 degrees. Makes two loaves or five to six mini-loaves.

Variations: Instead of apples, try three mashed bananas (also good with dates) or try 1 1/2 cups grated zucchini, fresh or frozen.
