Popcorn Balls

Cheap fun: It is what we are all about. And nothing is quite as fun as this sticky, yummy treat. And you can make it two ways!

Cracker Jack

Pop some popcorn. About 15 cups will do, but if you have a bit more that’s fine. I air-pop mine and discovered 1/2 cup of unpopped kernels equals approx. 15 cups of popped corn. Very handy.

Place popcorn in a gigantic bowl or, like I use, the biggest roasting pan you own.

In a saucepan combine:

1 cup molasses
1/2 cup sugar
1/2 tsp. salt
1 tbsp. margarine

Bring mixture to a gentle boil, stirring constantly. After about 2 minutes of boiling, test a drop or two in some cold water. If it forms a firm ball, it’s done. Pour over popcorn and stir to coat. Wait a few minutes for it to cool slightly, butter your hands and then shape mixture into balls. Allow to cool completely, then wrap each in wax paper.

For Cracker Jack:

Add 1 cup peanuts to popcorn. Complete recipe as written above, but spread mixture on a cookie sheet and allow to cool.

* I made a half a batch of each, putting half the popcorn and 1/2 cup of peanuts in a separate bowl.
