Pumpkin Walnut Bread

We love rich, moist loaves of dessert breads. This particular one has got a perfect mix of spices to enhance the pumpkin.

This recipe makes enough for two loaves, one to eat and one to share or freeze.

Pumpkin Walnut Bread

Combine the following ingredients in a large mixing bowl:

3 1/3 cups all-purpose flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. cloves
1/4 tsp. allspice
1 tsp. salt
1 cup chopped walnuts

In another bowl combine:

1 1/3 cup sugar
1 1/3 cup brown sugar
2/3 cup vegetable oil

Beat well. Then add:

4 eggs

Add the eggs 2 at a time, beating well each time. Then add:

2 cups pumpkin (use a 15oz can or make your own fresh mashed pumpkin)
1/2 cup milk

Mix well, then add wet ingredients to dry ingredients. Once thoroughly mixed, divide the batter evenly between 2 prepared loaf pans.

Bake at 350* for 55-60 minutes. Cool the bread in the pans for 10 minutes, then remove to a wire rack and cool completely.
