This cool, crisp, refreshing recipe is slightly modified from one I got at the Hampden Farmers Market a couple weeks back: I substituted carrots for the apples.
Why? Because one of the farmers there had carrots, not apples.
I did not put in the nuts either, only because I knew the rest of the family wouldn’t like them. One could always have them off to the side, to sprinkle on like nuts on a sundae.
One of the ingredients you may not readily have access to. If you visit the Hampden market, however, you can get yourself a bottle (I highly recommend it.) That is the Fiore Summer Peach Balsamic vinegar. I bought a bottle at the farmers market the week prior, using it on salads (fruit salad was suggested, too), so I was able to use it in this slaw recipe. Otherwise, another light vinegar should do.
Farmers Market Slaw
1 small cabbage, shredded or chopped
1/2 to 3/4 cup carrot, chopped or shredded
handful of walnuts – optional
Toss all together with dressing:
3/4 cup mayonnaise
2 tbsp. Fiore Summer Peach Balsamic
2 tsp. honey
Serve chilled.
